*Rosmarinus officinalis*
Botanical description:
Rosemary is a small shrub belonging to the Lamiaceae family. It is an integral part of the landscape of Provence and the imagery of the Mediterranean region. When cultivated, rosemary can reach a height of 2 meters. Its needle-like leaves are evergreen—green on the top and grayish-white underneath. The flowers, which grow in clusters, turn light blue or purple during the blooming period.
Origin and history:
Native to the Mediterranean basin, rosemary grows abundantly in the sunny *garrigue* (scrubland) of Southern France. As a culinary herb, its fresh or dried leaves are used in "sun-drenched" cuisine: in *bouquet garni*, marinades, grilled meats, and sauces. As a honey plant, rosemary honey is aromatic, sweet, and delicate. Finally, the list of rosemary’s phytotherapeutic properties is as extensive as its history and the legends surrounding it.
